Preparation
- In a bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt.
- In another bowl, cream the butter and brown sugar until light and fluffy.
- Beat in the egg and molasses.
- Gradually add the flour mixture and mix until combined.
- Divide the dough, wrap in plastic wrap, and chill for at least 2 hours.
Baking
- Preheat the oven to 350°F (175°C).
- Roll out the dough on a floured surface to about 1/4 inch thick.
- Cut out gingerbread men shapes and place on a baking sheet.
- Bake for 8-10 minutes or until set and edges are firm.
- Cool cookies completely before decorating with royal icing.
Notes
Store cookies in an airtight container for up to 5 days. Use parchment between layers to protect decorations.
