  • 2 large eggs, at room temperature
  • 1 teaspoon pure vanilla extract
  • 1/4 cup plain yogurt or sour cream Adds tender richness; use applesauce for a lighter swap.
Optional Add-ins
  • 1/2 cup chopped walnuts or chocolate chips Toasted pecans are lovely for festive treat versions.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line it with parchment for easy removal.
  2. In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon. Set aside.
  3. In a large bowl, whisk the melted butter with sugar until glossy. Add the eggs one at a time, beating until smooth, then stir in the vanilla.
  4. Fold in the mashed bananas and yogurt.
  5. Gently fold the dry ingredients into the wet ingredients until just combined.
  6. Stir in walnuts or chocolate chips if using.
  7. Spoon the batter into the prepared pan and smooth the top with a spatula. Sprinkle with brown sugar for a slightly crisp top if desired.
Baking
  1. Bake for 55-65 minutes, rotating halfway, until a toothpick inserted in the center comes out with moist crumbs.
  2. Let the bread cool in the pan for 10 minutes, then lift it onto a wire rack to cool completely before slicing.

Notes

For a healthier option, replace half the butter with unsweetened applesauce and swap 1/2 cup flour for oat flour. For an indulgent dessert, swirl in a ribbon of nut butter or sprinkle brown sugar on top before baking.
