Preparation
- Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line it with parchment for easy removal.
- In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon. Set aside.
- In a large bowl, whisk the melted butter with sugar until glossy. Add the eggs one at a time, beating until smooth, then stir in the vanilla.
- Fold in the mashed bananas and yogurt.
- Gently fold the dry ingredients into the wet ingredients until just combined.
- Stir in walnuts or chocolate chips if using.
- Spoon the batter into the prepared pan and smooth the top with a spatula. Sprinkle with brown sugar for a slightly crisp top if desired.
Baking
- Bake for 55-65 minutes, rotating halfway, until a toothpick inserted in the center comes out with moist crumbs.
- Let the bread cool in the pan for 10 minutes, then lift it onto a wire rack to cool completely before slicing.
Notes
For a healthier option, replace half the butter with unsweetened applesauce and swap 1/2 cup flour for oat flour. For an indulgent dessert, swirl in a ribbon of nut butter or sprinkle brown sugar on top before baking.
