  • 1 cup unsalted butter, softened Room temperature gives the creamiest texture.
  • 1 cup granulated sugar Can reduce to 3/4 cup for a less-sweet bar.
  • 1 large egg Room temperature adds structure and tenderness.
  • 1 teaspoon vanilla extract Pure vanilla makes a noticeable difference.
  • 2 cups all-purpose flour For a gluten-free version, try a 1-to-1 GF flour blend.
  • 1/4 teaspoon baking powder Helps the bars lift just enough.
  • 1/4 teaspoon salt Balances the sweetness.
  • 1/2 cup colorful sprinkles Use jimmies for color without bleeding; nonpareils will melt into pastel clouds.
Optional Finishing
  • 1/2 cup powdered sugar For dusting or melted white chocolate and extra sprinkles for drizzle.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease and line an 8x8-inch baking pan with parchment paper, letting the edges hang over for easy removal.
  2. In a large bowl, cream the softened butter and sugar together until light and fluffy, about 2 to 3 minutes.
  3. Beat in the egg and vanilla until fully combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually fold the dry mix into the butter mixture until it comes together into a soft dough.
  5. Gently fold in 3/4 of the sprinkles, reserving the rest to press on top or for decoration.
  6. Press the dough evenly into the prepared pan and sprinkle the remaining sprinkles evenly over the surface and press lightly so they stick.
Baking
  1. Bake for 20–25 minutes, rotating the pan halfway through. The edges should be golden and the center set but still tender.
  2. Remove from the oven and let cool completely in the pan on a wire rack.
  3. Once cooled, lift the bars from the pan using the parchment overhang and slice into squares.
  4. For a prettier finish, dust lightly with powdered sugar or drizzle melted white chocolate and sprinkle more jimmies on top.

Notes

Store at room temperature for up to 3 days. For longer storage, refrigerate or freeze as directed in the storage section.
