Dry Ingredients

  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon Use freshly ground for best flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and lightly grease a 9×5-inch loaf pan.
  2. In a large bowl, combine the pumpkin puree, vegetable oil, sugar, eggs, and vanilla extract, and whisk until smooth.
  3. In a separate bowl, mix together the flour, baking soda, baking powder, cinnamon, nutmeg, cloves, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
Baking
  1. Pour the batter into the prepared loaf pan and bake for about 60 minutes, or until a toothpick inserted into the center comes out clean.
  2. Allow the loaf to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

For variations, consider adding chocolate chips or chopped nuts to the batter. To store, wrap in plastic wrap or use an airtight container for up to 3 days at room temperature, or freeze for up to three months.
