  • 2 cups cornflakes, crushed crush with a rolling pin
  • 1 cup buttermilk or regular milk with a splash of vinegar
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • Optional: seasoning mix like paprika or Italian herbs for extra kick

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, pour the buttermilk over the chicken breasts until well-coated.
  3. In another bowl, combine the crushed cornflakes with garlic powder, onion powder, salt, and pepper.
  4. Dredge each chicken breast in the cornflake mixture, pressing down to ensure adhesion.
  5. Place the coated chicken on a baking sheet lined with parchment paper and drizzle olive oil over the top.
Cooking
  1. Bake for 25-30 minutes, until cooked through and the crust is golden brown.
  2. Let the chicken rest for 5 minutes before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days or freeze for a month. Reheat in a preheated oven at 375°F (190°C) for about 15-20 minutes.
