Country Apple Fritter Bread

Ingredients
  

For the Batter
  • 1/2 cup unsalted butter, at room temperature
  • 2 large eggs
  • 1 1/2 teaspoons vanilla essence
  • 1 1/2 cups all-purpose flour
  • 1 3/4 teaspoons baking powder
  • 1/2 cup milk or almond milk Plus 1 to 3 tablespoons for glaze
For the Sweetness
  • 2/3 cup white sugar
  • 1/3 cup light brown sugar
  • 2 tablespoons granulated sugar For mixing with chopped apples
  • 1/2 cup icing sugar For glaze
For the Apples
  • 2 apples, peeled and diced
  • 2 teaspoons cinnamon powder Used in batter and with apples

Method
 

Preparation
  1. Preheat your oven to 350 degrees F (175 degrees C). Grease a 9×5 inch loaf pan with non-stick cooking spray.
  2. In one bowl, combine 1/3 cup light brown sugar and 1 teaspoon of cinnamon.
  3. In another bowl, mix the chopped apples with 2 tablespoons of granulated sugar and the remaining teaspoon of cinnamon.
Mixing the Batter
  1. In a medium bowl, beat together 1/2 cup softened butter and 2/3 cup granulated sugar until smooth and creamy (about 5 minutes).
  2. Add the eggs one at a time, blending well after each addition.
  3. Mix in 1 1/2 teaspoons vanilla extract until fully incorporated.
Combining Ingredients
  1. In a separate bowl, whisk together 1 1/2 cups of all-purpose flour and 1 3/4 teaspoons of baking powder. Gradually add this to the creamed mixture and mix until well-blended.
  2. Stir in 1/2 cup milk or almond milk until smooth.
Layering and Baking
  1. Pour half of the batter into the prepared loaf pan, then add half of the apple mixture, and sprinkle with half of the brown sugar and cinnamon mixture.
  2. Repeat layering with the remaining batter, apples, and brown sugar mixture. Use a knife to gently swirl through the apples for distribution.
  3. Bake for about 1 hour and 10 minutes, or until a toothpick inserted in the center comes out clean.
Glazing
  1. For the glaze, combine 1/2 cup powdered sugar with 1 to 3 tablespoons of milk, adjusting for desired thickness.
  2. Let the loaf cool for about 15 minutes, then drizzle the glaze over the top.

Notes

Serve warm or at room temperature. Slice and enjoy with butter or a scoop of vanilla ice cream. Store wrapped for up to 3 days or freeze for up to 3 months.
