  • 1/2 teaspoon kosher salt and a pinch of black pepper
  • 8 slices bacon thick-cut gives more texture; turkey bacon works as a lower-fat option
  • 1 cup barbecue sauce your favorite sauce; use a smoky sauce for depth, or a sweet one for balance
  • 1 1/2 cups shredded sharp cheddar cheese mix cheddar and Monterey Jack for creaminess
  • 2 tablespoons olive oil or avocado oil for searing
  • 2 tablespoons chopped fresh parsley for garnish (optional)
  • 1 slice fresh lemon or lime to brighten before serving (optional)

Preparation
  1. Preheat the oven to 400°F (200°C). Line a baking dish with foil for easy cleanup and set aside.
  2. Mix paprika, garlic powder, onion powder, salt, and pepper on a small plate. Pat the chicken dry and season both sides evenly with the spice mix.
  3. Heat a large oven-safe skillet over medium-high heat and add the oil. When it shimmers, sear the chicken breasts 2–3 minutes per side until golden brown.
Cooking
  1. Remove the chicken briefly and lay two bacon slices across each breast. Brush some barbecue sauce on the chicken before placing the bacon for extra flavor.
  2. Return the bacon-topped chicken to the skillet or arrange in the prepared baking dish. Spoon a generous tablespoon of barbecue sauce over each breast, then sprinkle shredded cheddar evenly on top.
  3. Transfer the skillet or baking dish to the oven and bake for 15–20 minutes until the cheese is melted and bubbly, and the internal temperature of the chicken reaches 165°F (74°C).
  4. For extra crispness, switch the oven to broil for 1–2 minutes, watching closely so the cheese and bacon do not burn.
  5. Let rest for 5 minutes. Garnish with chopped parsley and a quick squeeze of lemon or lime before serving.

Notes

For a smoky homemade meal, add a dash of liquid smoke to the sauce. For a healthier option, swap half the cheese for a lower-fat variety and bake the bacon separately on a rack to drain fat.
