  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small red onion, finely chopped
  • 1 cup cherry tomatoes, halved
  • 1 medium avocado, diced for a creamy touch or swap with mangos for sweetness
  • 1/4 cup cilantro, chopped
  • 1/4 cup lime juice
  • 2 tablespoons olive oil

Preparation
  1. Start by chopping the red onion, bell peppers, and cherry tomatoes.
  2. In a large bowl, mix the drained black beans, corn, diced peppers, chopped onions, and halved cherry tomatoes.
  3. In a separate small bowl, whisk together the lime juice, olive oil, salt, and pepper. Pour this dressing over your vegetable mix.
  4. Gently toss everything together, ensuring the dressing coats all the ingredients. Adjust the seasoning as needed.
  5. Just before serving, add in the diced avocado and cilantro, and give it a gentle toss to combine.
  6. This dish is best enjoyed chilled. If possible, let it sit in the fridge for about 30 minutes before serving.

Notes

Feel free to add variations or substitutions, such as using quinoa instead of beans or adding jalapeƱos for extra spice. It can safely be stored in the refrigerator for up to three days.
