Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, cook the sausage over medium heat until browned. Drain excess fat and set aside.
  3. In a large bowl, combine the diced bread and cooked sausage.
  4. In another bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  5. Pour the egg mixture over the bread and sausage mixture. Stir in the chopped bell peppers and cheese.
  6. Grease a 9x13 inch baking dish and pour in the mixture, spreading it evenly.
  7. Bake for 30-35 minutes or until the casserole is set and golden brown on top.
  8. Let it sit for about 5 minutes before slicing and serving.

Notes

This casserole pairs well with fresh fruit or crispy bacon. Leftovers can be stored in the refrigerator for up to three days, or frozen for a month.
