  • 1 lb boneless, skinless chicken breasts Can substitute with boneless skinless thighs for extra richness.
  • 4 cups chicken broth
  • 1 packet ranch seasoning mix
  • 8 oz cream cheese Soften for a smoother base.
  • 1 cup shredded cheddar cheese Add more for a loaded soup.
  • 3-4 pieces green onions, chopped For garnish and flavor.
Seasoning
  • to taste salt and pepper Taste before adding salt as ranch mix and cheddar add saltiness.

Method
 

Preparation
  1. In a large pot, combine chicken, chicken broth, ranch seasoning, and cream cheese.
  2. Bring to a boil, then reduce heat and let simmer until chicken is cooked through.
  3. Remove the chicken, shred it, and return it to the pot.
  4. Stir in cheddar cheese and green onions, then season with salt and pepper to taste.
  5. Serve hot.

Notes

Serve hot in bowls with extra shredded cheddar and chopped green onions. For a heartier bowl, add crusty bread, crackers, or a scoop of cooked rice. Refrigerate leftovers in an airtight container for up to 3–4 days or freeze for up to 2 months.
