Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish with butter or cooking spray.
  2. Slice the bread into one-inch cubes and spread half of them evenly in the prepared baking dish.
  3. In a medium bowl, mix the softened cream cheese with a fork until smooth. Spread half of this mixture over the bread cubes. Top with the remaining bread and finish with the remaining cream cheese mixture.
  4. In another bowl, whisk together the eggs, milk, sugar, vanilla extract, and cinnamon until combined. Pour this mixture evenly over the bread and cream cheese layers in the dish.
  5. Press down gently on the bread cubes to help them absorb the liquid. If desired, cover the dish with plastic wrap and let it sit in the fridge overnight.
Baking
  1. When ready to bake, remove the cover and bake for 45 minutes, or until the casserole is set and golden brown on top.
  2. Let cool for a few minutes before serving.

Notes

Use day-old bread for best results. Don’t skimp on cream cheese for a smooth texture. Add toppings like nuts or granola before baking for extra crunch. A touch of citrus zest can brighten the flavor—think lemon or orange!
