Preparation
- Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish with butter or cooking spray.
- Slice the bread into one-inch cubes and spread half of them evenly in the prepared baking dish.
- In a medium bowl, mix the softened cream cheese with a fork until smooth. Spread half of this mixture over the bread cubes. Top with the remaining bread and finish with the remaining cream cheese mixture.
- In another bowl, whisk together the eggs, milk, sugar, vanilla extract, and cinnamon until combined. Pour this mixture evenly over the bread and cream cheese layers in the dish.
- Press down gently on the bread cubes to help them absorb the liquid. If desired, cover the dish with plastic wrap and let it sit in the fridge overnight.
Baking
- When ready to bake, remove the cover and bake for 45 minutes, or until the casserole is set and golden brown on top.
- Let cool for a few minutes before serving.
Notes
Use day-old bread for best results. Don’t skimp on cream cheese for a smooth texture. Add toppings like nuts or granola before baking for extra crunch. A touch of citrus zest can brighten the flavor—think lemon or orange!
