  • 1 cup mixed vegetables (e.g., bell peppers, carrots, peas) Double the vegetables for a heartier bowl
  • 2 tablespoons soy sauce Use tamari or gluten-free soy sauce to make gluten-free
  • 1 tablespoon olive oil For searing the chicken
  • Salt and pepper to taste Taste sauce before adding salt
  • Green onions for garnish Add for color and mild bite

Method
 

Preparation
  1. In a large pot, heat olive oil over medium heat.
  2. Add sliced chicken and cook until no longer pink.
  3. Stir in minced garlic and cook until fragrant.
  4. Add chicken broth, heavy cream, and soy sauce. Bring to a simmer.
  5. Add mixed vegetables and cook until tender.
  6. Cook ramen noodles according to package instructions, then drain and add to the pot.
  7. Stir everything to combine and heat through.
  8. Season with salt and pepper to taste, and serve garnished with green onions.

Notes

Cool to room temperature, then transfer to airtight containers and refrigerate for up to 3 days. Reheat gently on the stove, adding a splash of broth or water to loosen the sauce as it thickens when chilled. This dish does not freeze particularly well because the cream and noodles can separate and change texture. Add a squeeze of lemon or chili flakes for extra brightness or heat.
