Preparation
  1. Season the chicken breasts with salt and pepper.
  2. Heat a large skillet over medium heat, add butter and let it melt. Once bubbly, add chicken, cooking until golden brown on both sides (about 5-7 minutes each side).
  3. Once the chicken is cooked through, remove it to a plate. Add minced garlic to the skillet, cooking until fragrant.
  4. Sprinkle flour over the garlic and stir for about a minute. Gradually whisk in chicken broth and stir until thickened.
  5. Stir in heavy cream, letting the gravy simmer for a minute. Return the chicken to the skillet, allowing it to soak up the delicious flavors.
  6. Boil the potatoes until fork-tender. Drain and mash them with butter, salt, and a splash of milk until creamy.
  7. Plate the mashed potatoes and generously spoon the creamy garlic chicken and gravy over the top.

Notes

For healthy swaps, use boneless, skinless chicken breasts and low-fat cream. Add sautéed mushrooms or spinach for nutrition. Serve with seasonal veggies like roasted Brussels sprouts.
