Preparation
- Season the chicken breasts with salt and pepper.
- Heat a large skillet over medium heat, add butter and let it melt. Once bubbly, add chicken, cooking until golden brown on both sides (about 5-7 minutes each side).
- Once the chicken is cooked through, remove it to a plate. Add minced garlic to the skillet, cooking until fragrant.
- Sprinkle flour over the garlic and stir for about a minute. Gradually whisk in chicken broth and stir until thickened.
- Stir in heavy cream, letting the gravy simmer for a minute. Return the chicken to the skillet, allowing it to soak up the delicious flavors.
- Boil the potatoes until fork-tender. Drain and mash them with butter, salt, and a splash of milk until creamy.
- Plate the mashed potatoes and generously spoon the creamy garlic chicken and gravy over the top.
Notes
For healthy swaps, use boneless, skinless chicken breasts and low-fat cream. Add sautéed mushrooms or spinach for nutrition. Serve with seasonal veggies like roasted Brussels sprouts.
