- Cook the gnocchi according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
- Add fresh spinach to the skillet and cook until wilted.
- Pour in the heavy cream and bring to a simmer. Stir in the crumbled feta cheese until melted and combined.
- Add cooked gnocchi to the skillet, gently tossing to coat in the creamy sauce.
- Season with salt and pepper to taste.
- Serve hot, topped with grated Parmesan cheese if desired.
Notes
Store in an airtight container in the refrigerator for 3-4 days. Reheat gently with a splash of cream or milk. Freezing is not recommended as gnocchi can become gummy.
