Ingredients

Main Ingredients
  • 2 large large cucumbers, sliced Consider English cucumbers for less seeds.
  • 1 cup sour cream Or Greek yogurt for a healthier option.
  • 1/4 cup mayonnaise
  • 2 tablespoons fresh dill, chopped Or 1 tablespoon dried dill.
  • 1 tablespoon red wine vinegar
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Optional: sliced red onions for extra flavor

Method

Preparation
  1. Wash the cucumbers thoroughly. If using regular cucumbers, peel them as desired.
  2. Slice the cucumbers thinly and place them in a large mixing bowl.
  3. In a separate bowl, combine the sour cream, mayonnaise, dill, red wine vinegar, and garlic powder. Whisk until smooth.
  4. Season the dressing with salt and pepper to taste.
  5. Pour the dressing over the cucumber slices and toss gently to coat all the pieces evenly.
  6. Allow the salad to chill in the refrigerator for at least 30 minutes before serving to let the flavors meld together.
  7. Give the salad a quick toss again before serving, and garnish with extra dill if desired.

Notes

For a lighter version, swap the sour cream and mayonnaise for a yogurt-based dressing. Add cherry tomatoes or bell peppers for a pop of color and sweetness. For a spicy kick, incorporate sliced jalapeƱos or a dash of hot sauce into the dressing. Try adding a splash of lemon juice for a zesty finish, or experiment with different herbs like basil or parsley.
