Main ingredients
  • 1 lb boneless, skinless chicken breasts You can also use thighs.
  • 2 cups sliced mushrooms Cremini or button mushrooms work well.
  • 1 cup heavy cream For a lighter option, use half-and-half.
  • 3 cloves garlic, minced
  • 1 medium onion, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Method
 

Preparation
  1. Season the chicken breasts with salt and pepper on both sides.
Cooking
  1. In a large skillet, heat the olive oil over medium-high heat. Add the chicken and cook for about 6-7 minutes per side, until golden brown. Remove the chicken and set it aside.
  2. In the same skillet, reduce the heat to medium and melt the butter. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the sliced mushrooms and garlic. Cook for another 5-6 minutes, stirring frequently, until browned and tender.
  4. Pour in the heavy cream, scraping any browned bits from the bottom of the pan. Let the sauce simmer until it thickens slightly.
  5. Return the chicken to the skillet and simmer in the creamy sauce for an additional 5 minutes.
  6. Sprinkle with fresh parsley before serving.

Notes

Pairs wonderfully with rice, mashed potatoes, or a green salad. Store leftovers in an airtight container for up to three days. Reheat gently on the stovetop.
