Pasta
  • 8 ounces 8 ounces of pasta (penne or fettuccine) Feel free to use whole wheat for a healthier option.
Sausage
  • 1 pound 1 pound of Cajun sausage (smoked sausage or andouille)
Base
  • 1 tablespoon 1 tablespoon olive oil Can substitute with butter for richness.
  • 1 medium 1 medium onion, diced
  • 3 cloves 3 cloves of garlic, minced
Creamy Sauce
  • 1 cup 1 cup heavy cream Swap with half-and-half for a lighter option.
  • 1 tablespoon 1 tablespoon Cajun seasoning Homemade blends are fun to experiment with.
  • Salt and pepper Salt and pepper, to taste
Garnish
  • Fresh parsley or green onions, for garnish

Method
 

Preparation
  1. In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Drain and set aside.
Cooking
  1. In the same pot, heat the olive oil over medium heat. Add the sliced Cajun sausage and cook until browned, about 5-7 minutes.
  2. Toss in the diced onion and garlic, cooking until fragrant and the onion is translucent, about 2-3 minutes.
  3. Pour in the heavy cream and sprinkle the Cajun seasoning. Stir well to combine, letting the mixture simmer for about 2 minutes.
  4. Stir in the cooked pasta, mixing thoroughly. Season with salt and pepper to taste. Let it simmer for another minute, allowing the flavors to meld.
  5. Serve warm, topped with chopped parsley or green onions for a vibrant finish.

Notes

Feel free to add more veggies like bell peppers or spinach, and adjust the spice level with cayenne or crushed red peppers. Parmesan cheese can enhance flavor just before serving.
