Pasta and Sauce Ingredients
  • 8 oz penne pasta (or any pasta you prefer) Any pasta can be used.
  • 1 lb spicy sausage (Italian or andouille) Choose according to preference.
  • 1 cup heavy cream Can substitute with half-and-half for a lighter option.
  • 1 cup chicken or vegetable broth
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tsp Cajun seasoning Add more if you love spice!
  • 1 cup bell peppers, diced (red or green)
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Method
 

Cooking Instructions
  1. Boil a pot of salted water. Cook the penne pasta according to package instructions until al dente, then drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  3. Stir in the minced garlic and diced bell peppers, cooking for another 2-3 minutes until fragrant and soft.
  4. Add the spicy sausage to the skillet, breaking it up with a spoon. Cook until browned and cooked through, about 5-7 minutes.
  5. Pour in the chicken or vegetable broth and scrape any browned bits from the bottom of the skillet. Stir in the Cajun seasoning.
  6. Reduce the heat to low and add the heavy cream, stirring to combine. Let it simmer for a few minutes until the sauce thickens slightly.
  7. Fold in the cooked pasta, ensuring it’s well-coated with the creamy sauce. Season with salt and pepper to taste.
  8. Garnish with fresh parsley before serving.

Notes

Feel free to swap spinach with kale for a stronger flavor or use whole-grain pasta for a healthier spin. Storing leftovers is simple; refrigerate for up to 3 days.
