Preparation
- Preheat the oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top for crisper bacon.
- Cut each jalapeño in half lengthwise and scoop out the seeds and membranes. Rinse and pat dry.
- In a bowl, beat the softened cream cheese until smooth. Stir in shredded cheddar, garlic powder, smoked paprika, black pepper, and a pinch of salt. Adjust seasoning to taste.
Assembly
- Spoon or pipe the cheese mixture into each jalapeño half, mounding slightly.
- Cut each bacon slice in half and wrap around each stuffed jalapeño, securing the end underneath.
Cooking
- Place the wrapped bites seam-side down on the wire rack. Bake for 20-25 minutes or until bacon is deeply golden and filling is bubbling.
- Let the bites rest for 5 minutes before serving. Garnish with extra green onions or a dusting of smoked paprika.
Notes
You can assemble and refrigerate the bites up to 24 hours before baking. For a healthier option, use turkey bacon and reduced-fat cream cheese.
