For the Jalapeño Bites
  • 12 large jalapeños Choose firm peppers; remove all seeds for milder bites.
  • 8 ounces cream cheese, softened Full-fat gives the creamiest filling; Neufchâtel is a lighter substitute.
  • 1 cup shredded sharp cheddar cheese Or pepper jack for extra kick.
  • 12 slices thin-cut bacon Turkey bacon works as a healthy option; cooking time may vary.
  • 1 teaspoon garlic powder Or 1 small clove minced fresh garlic.
  • 1/2 teaspoon smoked paprika Lends a warm smokiness; regular paprika is fine.
  • 1/4 teaspoon black pepper Plus a pinch of salt; taste the filling before stuffing.
  • 1 tablespoon chopped green onions or cilantro Optional for garnish.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top for crisper bacon.
  2. Cut each jalapeño in half lengthwise and scoop out the seeds and membranes. Rinse and pat dry.
  3. In a bowl, beat the softened cream cheese until smooth. Stir in shredded cheddar, garlic powder, smoked paprika, black pepper, and a pinch of salt. Adjust seasoning to taste.
Assembly
  1. Spoon or pipe the cheese mixture into each jalapeño half, mounding slightly.
  2. Cut each bacon slice in half and wrap around each stuffed jalapeño, securing the end underneath.
Cooking
  1. Place the wrapped bites seam-side down on the wire rack. Bake for 20-25 minutes or until bacon is deeply golden and filling is bubbling.
  2. Let the bites rest for 5 minutes before serving. Garnish with extra green onions or a dusting of smoked paprika.

Notes

You can assemble and refrigerate the bites up to 24 hours before baking. For a healthier option, use turkey bacon and reduced-fat cream cheese.
