  • 1 lb boneless chicken thighs, cut into bite-sized pieces Can substitute with chicken breasts or tofu for a vegetarian option
  • 1/2 cup cornstarch For that irresistible crunch
  • 2 tablespoons vegetable oil For frying
  • 1/4 cup soy sauce Can be substituted with tamari or coconut aminos
  • 2 tablespoons honey or brown sugar For sweetness
  • 2 teaspoons sesame oil
  • 1 inch ginger, finely grated
  • 2 cloves garlic, minced
  • 2 tablespoons sesame seeds Toast before adding for enhanced flavor
  • Chopped green onions for garnish

Method
 

Preparation
  1. In a large bowl, toss the chicken pieces with cornstarch until well coated.
Cooking
  1. In a large skillet or wok, heat the vegetable oil over medium-high heat until it shimmers.
  2. Add the chicken pieces to the skillet in a single layer, without overcrowding. Cook for about 5-7 minutes, turning once, until golden brown and crispy. Remove the chicken and set aside.
  3. In the same skillet, reduce heat to medium. Add ginger and garlic, cooking briefly until fragrant. Then, add soy sauce, honey, and sesame oil, stirring until well combined.
  4. Return the crispy chicken to the skillet, tossing to coat evenly in the sauce. Allow to simmer for an additional 2-3 minutes.
  5. Sprinkle with sesame seeds and chopped green onions before serving.

Notes

If desired, add a tablespoon of Sriracha or chili garlic sauce for some heat. For added nutrition, toss in some broccoli, bell peppers, or snap peas. Store leftovers in an airtight container for up to three days.
