Main Ingredients
  • 1 lb tender beef (sliced into thin strips) Use ribeye, sirloin, or deli-style roast beef.
  • 1 piece bell pepper (sliced)
  • 1 piece onion (sliced)
  • 1 cup mushrooms (sliced)
  • 1 package cheese tortellini
  • 2 cups beef broth
  • 1 cup cream cheese Let sit at room temperature for easy blending.
  • 1 cup shredded mozzarella cheese Add near the end of cooking.
  • to taste Salt and pepper
  • to taste Italian seasoning Optional.

Preparation
  1. In the Crock Pot, combine the sliced beef, bell pepper, onion, mushrooms, and cheese tortellini.
  2. Pour in the beef broth and add the cream cheese.
  3. Season with salt, pepper, and optional Italian seasoning.
  4. Stir to combine.
Cooking
  1. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the beef is tender and the tortellini is cooked.
  2. About 10 minutes before serving, stir in the shredded mozzarella cheese until melted and creamy.

Notes

Serve hot with extra mozzarella or Parmesan, and enjoy with crusty bread or salad. Store leftovers in an airtight container in the fridge for up to 3-4 days.
