  • 2.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1.5 cups brown sugar, packed
  • 0.5 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup shredded coconut sweetened or unsweetened
  • 1 cup chocolate chips optional

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking soda, and salt. Set this mixture aside.
  3. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 3-4 minutes.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined.
  6. Fold in the shredded coconut and chocolate chips if you're using them.
  7. Using a cookie scoop or spoon, drop large balls of dough onto a lined baking sheet, spacing them about 2 inches apart.
Baking
  1. Bake in the preheated oven for 12-15 minutes, until the edges are golden but the centers are still soft.
  2. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Chill the dough for about 30 minutes before baking for thicker cookies. Don’t overmix the dough to keep cookies tender. Use high-quality ingredients for the best flavor.
