Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy—this should take about 3 minutes.
- Add in the pumpkin puree and eggs, mixing until well combined.
- In another bowl, whisk the dry ingredients: flour, baking soda, baking powder, cinnamon, ginger, nutmeg, cloves, and salt.
- Slowly incorporate the dry mixture into the wet ingredients, stirring just until combined, being careful not to overmix.
- Gently fold in the white chocolate chips until evenly distributed.
- Drop spoonfuls of dough onto your prepared baking sheet, spacing them about 2 inches apart.
Baking
- Bake for 12-15 minutes or until the edges are lightly golden and the centers appear set.
- Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack.
