  • 2 medium medium apples (like Granny Smith or Honeycrisp), cored and diced
  • 1/4 cup fresh parsley, chopped (or swap with cilantro for a different flavor)
  • 1/4 cup walnuts, chopped (for extra crunch; pecans are a great alternative)
  • Juice of 1 lemon lemon
  • 2 tablespoons olive oil

Method
 

Preparation
  1. In a large bowl, combine the sliced cucumbers and diced apples.
  2. Add the chopped red onion and parsley. If you're using nuts, toss them in now.
  3. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
  4. Pour the dressing over the salad and gently toss to coat all the ingredients evenly.
  5. Taste and adjust seasoning if necessary, adding more salt, pepper, or lemon juice according to your preference.
  6. Serve immediately or allow it to chill in the fridge for about 10-15 minutes to let the flavors meld.

Notes

Store any leftovers in an airtight container in the refrigerator. Best eaten within one day. Keep dressing separate if preparing ahead.
