Preparation
- Preheat the oven to 400°F (200°C).
- In a mixing bowl, combine the shredded chicken, cheddar cheese, cream cheese, and chopped onion. Mix until well combined.
- Place a small amount of the chicken mixture onto a tortilla, roll it tightly, and place seam-side down on a baking sheet. Repeat with the remaining tortillas and filling.
Baking
- Bake for 20-25 minutes or until golden and crispy.

- Serve hot with sides like guacamole, pico de gallo, sour cream, or salsa verde.
Notes
Cool completely before storing in an airtight container for up to 3 days. To re-crisp, bake at 375°F (190°C) for 8-10 minutes. For freezing, place on a tray until firm and transfer to a freezer bag for up to 2 months. Reheat from frozen at 375°F (190°C) for 15-20 minutes.
