  • 1 cup cooked quinoa Feel free to use any color of quinoa!
  • 1/4 cup grated cheese Cheddar, mozzarella, or your choice
  • 1 large egg, beaten For binding
  • 1/2 cup breadcrumbs Substitute with almond flour for a gluten-free option
  • 1 teaspoon garlic powder Or fresh minced garlic for stronger flavor
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Optional: chopped herbs or spices Such as parsley, cilantro, or a pinch of paprika

Preparation
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the cooked quinoa, grated cheese, beaten egg, breadcrumbs, garlic powder, onion powder, salt, and pepper.
  3. Mix everything thoroughly until well combined. The mixture should hold together; add more breadcrumbs if needed for consistency.
  4. Using your hands, form small bite-sized balls (about 1 inch in diameter) and place them evenly on the baking sheet.
  5. Bake for 20-25 minutes, or until they are golden brown and crispy.
  6. Remove from the oven and let them cool slightly before serving.

Notes

These bites can be prepared a day in advance, and you can freeze them after forming for later use. Store leftovers in an airtight container in the fridge for up to 3 days.
