  1. In a large mixing bowl, combine diced cucumbers and chopped tomatoes.
  2. Add the thinly sliced red onion, soaking it in cold water for 10 minutes before draining for a milder flavor if desired.
  3. Drizzle olive oil and fresh lemon juice over the veggie mixture.
  4. Gently toss everything together to coat evenly, being careful not to crush the tomatoes.
  5. Season with salt and pepper to taste, adjusting according to your preference.
  6. If you have fresh herbs on hand, sprinkle them over the top for an added layer of flavor.
  7. Let the salad sit for about 5-10 minutes to allow flavors to meld before serving.

Notes
