Preparation
  1. Wash and peel your cucumbers, then slice them in half lengthwise and dice into bite-sized pieces.
  2. In a large mixing bowl, combine the diced cucumbers, crumbled feta cheese, chopped red onion, and parsley.
  3. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper until well blended.
  4. Pour the dressing over the salad mixture and gently toss to combine, ensuring everything is well-coated.
  5. Allow the salad to sit for about 10 minutes before serving to let the flavors meld together.

Notes

To store leftovers, keep the salad in an airtight container in the refrigerator for up to 2 days. If adding avocado, consider adding it fresh to prevent browning. Customize the dressing as per taste preference.
