Preparation
- Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
- Grate the cucumber and let it sit in a colander for a few minutes to drain any excess moisture.
Mixing
- In a mixing bowl, whisk together the sugar, vegetable oil, eggs, and vanilla extract until smooth and creamy.
- In another bowl, mix the all-purpose flour, baking powder, baking soda, and salt until well combined.
- Gradually stir the dry mixture into the wet ingredients until just combined. Avoid overmixing.
- Gently fold the grated cucumber into the batter.
Baking
- Pour the batter into the prepared loaf pan, leveling the top with a spatula.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
