  • 8 slices soft white or whole wheat bread Choose based on preference.
  • 4 ounces cream cheese, softened Consider using herb-infused cream cheese for extra flavor.
  • 1 medium cucumber, thinly sliced English cucumbers work wonderfully for their fewer seeds.
  • Salt and pepper to taste
  • Fresh dill or chives for garnishing Optional.

Method
 

Preparation
  1. Lay the slices of bread on a clean surface. Trim the crusts if desired.
  2. Generously spread an even layer of softened cream cheese onto one side of each slice of bread.
  3. Layer the thin cucumber slices across half of the cream cheese-covered slices, overlapping slightly.
  4. Sprinkle a pinch of salt and pepper over the cucumbers.
  5. Top each cucumber-laden slice with the remaining pieces of bread, cream cheese side down.
  6. Cut the sandwiches into triangles or fingers to serve, and arrange on a platter.

Notes

These sandwiches are best enjoyed fresh. Store leftovers in an airtight container in the refrigerator for up to a day.
