  • 4 medium cucumbers, sliced thinly English cucumbers work well too
  • 1 large sweet onion, thinly sliced Vidalia or Walla Walla are great choices
  • 1 cup apple cider vinegar
  • ½ cup granulated sugar adjust for sweetness
  • 1 teaspoon salt
  • Fresh black pepper to taste
  • Optional: chopped fresh dill or parsley for garnish

Preparation
  1. Wash the cucumbers and slice them thinly, about 1/8-inch thick. If using regular cucumbers, consider peeling them for a softer texture. Place the cucumber slices in a large bowl.
  2. Using a sharp knife, slice the sweet onion thinly and add it to the bowl with the cucumbers.
  3. In a separate mixing bowl, whisk together the apple cider vinegar, granulated sugar, salt, and pepper until the sugar dissolves completely.
  4. Pour the dressing over the cucumber and onion, tossing gently to ensure all the vegetables are covered.
  5. Let the salad sit for at least 30 minutes in the refrigerator to allow the flavors to meld together. It can also be made a day in advance for even better flavor.

Notes

Feel free to get creative with this salad! Consider adding diced tomatoes, shredded carrots, or sliced bell peppers. For a spicier kick, a hint of crushed red pepper flakes can elevate the dressing. A dollop of sour cream or plain yogurt can make it creamier.
