Preparation
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a small bowl, combine the chopped dates with boiling water and baking soda. Let this mixture sit while you prepare the other ingredients.
- In a large bowl, cream together the softened butter and sugar until the mixture is light and fluffy.
- Beat in the eggs one at a time, ensuring each is well incorporated before adding the next. Stir in the vanilla extract.
- Gradually stir in the date mixture, ensuring it’s evenly mixed.
- Slowly fold in the flour until just combined, taking care not to over-mix. Finally, stir in the chopped nuts.
Baking
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake in the preheated oven for about 50 minutes or until a toothpick inserted in the center comes out clean.
- Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Notes
To keep your Date Nut Bread fresh, wrap it in plastic wrap or store it in an airtight container at room temperature for up to five days. It can also be frozen for up to three months. Let it thaw overnight in the refrigerator or warm it in the microwave for a few seconds.
