  • 2 cups cooked protein (shredded rotisserie chicken or canned tuna) The backbone of the casserole. Swap chicken for turkey after holiday meals.
  • 1 can condensed cream soup (cream of mushroom or cream of chicken) For a silky, comforting sauce. Consider low-sodium for a lighter option.
  • 1 cup sour cream or plain Greek yogurt Adds tang and richness; Greek yogurt offers a healthier option.
  • 2 cups frozen mixed vegetables (corn, peas, carrots) Provides color and texture; fresh steamed veggies can be used instead.
  • 1 cup shredded cheddar cheese (plus extra for topping) Sharp cheddar adds depth; Gruyere can be substituted for a nutty twist.

Preparation
  1. Preheat your oven to 375°F (190°C). Butter a 9×13-inch baking dish or spray it lightly.
  2. In a large bowl, stir together the condensed soup and sour cream (or Greek yogurt) until smooth.
  3. Fold in the cooked protein and frozen mixed vegetables. Season with salt and pepper to taste.
  4. Stir in 1 cup of shredded cheddar cheese until it melts slightly into the mixture.
  5. Spoon the mixture into the prepared baking dish, smoothing the top.
  6. Sprinkle additional cheese on top and optionally add breadcrumbs or crushed crackers.
Baking
  1. Bake for 25–30 minutes until bubbly at the edges and golden brown on top.
  2. Let it rest for 5 minutes before serving to help it set and slice neatly.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. For freezing, assemble in a freezer-safe dish and freeze for up to 2 months.
