Preparation
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan or line it with parchment paper.
- In a large bowl, whisk together the flour, cocoa powder, baking soda, baking powder, salt, and cinnamon until well combined.
- In a separate mixing bowl, beat together the granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract until blended and creamy.
- Gently fold the grated zucchini into the wet ingredients, ensuring it’s evenly mixed.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.
- Fold in the chocolate chips, saving a handful to sprinkle on top for an extra chocolatey finish.
- Pour the batter into the prepared loaf pan, smoothing the top.
Baking
- Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
