Ingredients
  

For the Chicken
  • 4 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil For marinating and sautéing
  • 3 cloves garlic, minced
  • 2 lemons juice and zest For flavoring
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 to taste Salt and pepper
For the Zucchini
  • 1 piece zucchini, sliced Can substitute with bell peppers or asparagus
  • 1 tablespoon olive oil For sautéing
For Garnish
  • to taste Fresh parsley, optional For garnish

Method
 

Marinating the Chicken
  1. In a bowl, combine olive oil, lemon juice, garlic, paprika, cumin, salt, and pepper.
  2. Coat the chicken breasts with this marinade and let them sit for at least 15 minutes.
Sautéing the Zucchini
  1. In a skillet over medium heat, add a drizzle of olive oil.
  2. Add the sliced zucchini, a pinch of salt, and sauté until tender, about 5–7 minutes.
  3. Remove from the skillet and set aside.
Cooking the Chicken
  1. In the same skillet, add the marinated chicken breasts.
  2. Cook on medium-high heat for about 6–7 minutes on each side or until cooked through and golden brown.
Combining Ingredients
  1. Once the chicken is cooked, add the sautéed zucchini back to the skillet.
  2. Pour a splash of lemon juice and sprinkle the zest over the top.
  3. Stir gently and let everything mingle for a couple of minutes.
Serving
  1. Plate the chicken and zucchini, garnishing with fresh parsley if desired.

Notes

For deeper flavor, marinate the chicken longer. Experiment with fresh herbs or cheese for extra flavor. Store leftovers in an airtight container for up to 3 days.
