Preparation
- Preheat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line with parchment.
- In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
- In a large bowl, whisk the melted butter and sugar until glossy; add the beaten eggs and vanilla.
- Mash bananas until smooth and fold into the wet mixture.
- Gently fold dry ingredients into the wet mixture.
- Spoon batter into the loaf pan and smooth the top.
Baking
- Bake for 50 to 65 minutes, or until a toothpick comes out with moist crumbs.
- Cool in the pan for 10 minutes, then transfer to a wire rack.
Notes
Store at room temperature for up to 3 days. Wrap to prevent drying.
