  • 1 3/4 cups all-purpose flour Swap half for whole wheat for a healthy option.

Wet Ingredients
  • 1/2 cup unsalted butter, melted and slightly cooled Coconut oil works for a dairy-free swap.
  • 3/4 cup granulated sugar Reduce to 1/2 cup for a less sweet loaf, or use brown sugar for deeper flavor.
  • 2 large eggs, at room temperature
  • 3 very ripe bananas, mashed (about 1 1/2 cups) Overripe with brown spots are perfect.
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream or plain yogurt Adds tenderness and richness.
Optional Add-ins
  • 1/2 cup chopped walnuts or chocolate chips A classic family recipe touch.

Method
 

Preparation
  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment for easy removal.
  2. In a medium bowl, whisk together flour, baking soda, salt, and cinnamon until evenly combined.
  3. In a large bowl, whisk melted butter and sugar until glossy. Add eggs one at a time, beating until the mixture becomes light and slightly fluffy.
  4. Stir in mashed bananas and vanilla; fold in sour cream or yogurt until smooth.
  5. Gently fold the dry ingredients into the banana mixture with a spatula until just combined.
  6. Fold in walnuts or chocolate chips if using.
  7. Pour batter into the prepared pan and smooth the top. Tap the pan on the counter once to settle the batter.
Baking
  1. Bake for 55–65 minutes, or until a toothpick inserted comes out with a few moist crumbs.
  2. Let loaf cool in pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

For variations, consider adding chocolate chips, shredded coconut, or making it vegan. Store banana bread at room temperature, in the fridge, or freeze for later.
