Method
Cooking the Pasta
- Boil a large pot of salted water. Cook the rotini pasta according to the package instructions until al dente. Drain and rinse under cold water.
Mixing the Ingredients
- In a large mixing bowl, combine the cooked pasta, shredded chicken, corn, diced bell pepper, cherry tomatoes, and red onion. Toss gently to mix.
Preparing the Dressing
- In a separate bowl, whisk together the BBQ sauce and mayonnaise until smooth.
Combining Everything
- Pour the dressing over the pasta mixture and toss until everything is coated. Adjust seasoning with salt and pepper.
Chilling and Serving
- Cover the bowl and refrigerate for at least 30 minutes before serving.
Notes
Store leftovers in an airtight container for up to 3 days. Add more BBQ sauce or mayo if it gets dry. This dish is best enjoyed cold.
