  • 2 cups cooked chicken, shredded Rotisserie chicken can be used for convenience.
Vegetables
  • 1 cup corn Fresh, frozen, or canned corn can be used.
  • 1 medium bell pepper, diced Choose your favorite color.
  • 1 cup cherry tomatoes, halved Adds juiciness and freshness.
  • ½ cup finely chopped red onion Provides sharpness to the dish.
Dressings and Seasonings
  • 1 cup BBQ sauce Homemade or store-bought can be used.
  • ½ cup mayonnaise For creaminess and richness.

Method
 

Cooking the Pasta
  1. Boil a large pot of salted water. Cook the rotini pasta according to the package instructions until al dente. Drain and rinse under cold water.
Mixing the Ingredients
  1. In a large mixing bowl, combine the cooked pasta, shredded chicken, corn, diced bell pepper, cherry tomatoes, and red onion. Toss gently to mix.
Preparing the Dressing
  1. In a separate bowl, whisk together the BBQ sauce and mayonnaise until smooth.
Combining Everything
  1. Pour the dressing over the pasta mixture and toss until everything is coated. Adjust seasoning with salt and pepper.
Chilling and Serving
  1. Cover the bowl and refrigerate for at least 30 minutes before serving.

Notes

Store leftovers in an airtight container for up to 3 days. Add more BBQ sauce or mayo if it gets dry. This dish is best enjoyed cold.
