Preparation
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Slice the loaf horizontally to create two even halves. For pull-apart slices, make diagonal cuts into the top crust without cutting all the way through.
- In a small bowl, mix softened butter, minced garlic, salt, pepper, and half the parsley. Taste for seasoning.
- Spread the garlic butter generously over both cut sides.
- Sprinkle mozzarella evenly over the buttered halves, then add Parmesan and remaining parsley. Include red pepper flakes if desired.
Baking
- Place the halves on the prepared baking sheet, cheese-side up and bake for 10-15 minutes until the cheese is bubbling and golden.
- For an extra-crispy top, switch to broil for 1-2 minutes, watching closely.
- Remove from the oven and let rest for 2 minutes before slicing and serving.
Notes
Use a high-quality loaf for a crisp crust and tender crumb. Can also be made ahead and refrigerated before baking.
