  • 1 large French baguette or Italian loaf Day-old bread works beautifully for texture.
  • 1/2 cup unsalted butter, softened Can be swapped with olive oil for a lighter option.
  • 3-4 cloves garlic, finely minced Roasted garlic gives a mellow, sweeter aroma.
  • 1 1/2 cups shredded mozzarella A mixture of mozzarella and fontina can be used for extra melt.
  • 1/4 cup grated Parmesan Pecorino Romano is a great substitute.
  • 2 tablespoons fresh parsley, chopped Basil or chives will brighten the flavor.
  • 1/2 teaspoon kosher salt
  • 1 pinch black pepper
  • Optional: red pepper flakes For heat, or a sprinkle of Italian seasoning.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Slice the loaf horizontally to create two even halves. For pull-apart slices, make diagonal cuts into the top crust without cutting all the way through.
  3. In a small bowl, mix softened butter, minced garlic, salt, pepper, and half the parsley. Taste for seasoning.
  4. Spread the garlic butter generously over both cut sides.
  5. Sprinkle mozzarella evenly over the buttered halves, then add Parmesan and remaining parsley. Include red pepper flakes if desired.
Baking
  1. Place the halves on the prepared baking sheet, cheese-side up and bake for 10-15 minutes until the cheese is bubbling and golden.
  2. For an extra-crispy top, switch to broil for 1-2 minutes, watching closely.
  3. Remove from the oven and let rest for 2 minutes before slicing and serving.

Notes

Use a high-quality loaf for a crisp crust and tender crumb. Can also be made ahead and refrigerated before baking.
