For the Casserole Filling
  • 3 cups shredded cooked chicken Use rotisserie chicken for convenience.
  • 10.5 oz condensed cream of chicken soup
  • 1 cup sour cream Use reduced-fat for a lighter version.
  • 1/2 cup milk Can be reduced to 1/4 cup for a thicker filling.
  • 2 tbsp dry ranch seasoning
  • 1.5 cups shredded Colby Jack cheese Can substitute with cheddar or a Mexican blend.
  • 4 slices cooked bacon Crumble before adding to the casserole.
  • 5 cups frozen tater tots Fresh potatoes can be used as an alternative.
For Garnish
  • 1/4 cup sliced green onions For garnish before serving.

Preparation
  1. Preheat your oven to 375°F (190°C) and grease a 9×13 baking dish.
  2. In a mixing bowl, combine shredded chicken, cream of chicken soup, sour cream, milk, dry ranch seasoning, and 1 cup of cheese until well mixed.
  3. Spread the mixture evenly in the greased dish and sprinkle half of the crumbled bacon on top.
  4. Arrange frozen tater tots in a single layer over the filling.
Baking
  1. Bake uncovered for 30 minutes.
  2. Remove from the oven and add the remaining cheese; bake for an additional 10 minutes until bubbly.
Serving
  1. Garnish with remaining bacon and green onions before serving warm.

Notes

Serve hot straight from the baking dish. Great paired with a simple green salad or steamed veggies. For added crispiness, bake uncovered for 5–10 minutes at the end or broil briefly while watching closely.
