Preparation
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line it with parchment paper for easy release.
- In a bowl, whisk together the flour, baking soda, salt, and cinnamon until evenly combined. Set aside.
- In a large mixing bowl, whisk the melted butter and sugar until glossy. Add the eggs one at a time, beating lightly after each addition, then stir in vanilla.
- Stir in the mashed bananas and sour cream or yogurt.
- Fold the dry ingredients into the wet until just combined. Gently fold in the nuts and chocolate chips if using.
Baking
- Pour the batter into your prepared loaf pan and smooth the top. Bake for 55 to 65 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
- Let the loaf cool in the pan for 10 minutes, then lift it out and cool completely on a wire rack before slicing.
