Ingredients
  

Dry Ingredients
  • 1.5 cups all-purpose flour Swap half for whole wheat flour for a healthier option.
  • 1 teaspoon baking soda
  • 0.5 teaspoon fine sea salt
  • 0.5 teaspoon ground cinnamon Optional for added warmth.
Wet Ingredients
  • 0.5 cups unsalted butter, melted and slightly cooled Can use coconut oil for a dairy-free option.
  • 0.75 cups granulated sugar Reduce to 1/2 cup or use maple syrup for a less refined sugar option.
  • 2 large eggs, at room temperature
  • 1 teaspoon pure vanilla extract
  • 1 cup mashed ripe bananas About 2 to 3 bananas; the riper, the sweeter.
  • 0.25 cups sour cream or Greek yogurt Can use applesauce for a lighter loaf.
Optional Add-ins
  • 0.5 cups chopped walnuts or pecans Toast for extra nuttiness.
  • 0.5 cups chocolate chips For a more indulgent dessert.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line it with parchment paper for easy release.
  2. In a bowl, whisk together the flour, baking soda, salt, and cinnamon until evenly combined. Set aside.
  3. In a large mixing bowl, whisk the melted butter and sugar until glossy. Add the eggs one at a time, beating lightly after each addition, then stir in vanilla.
  4. Stir in the mashed bananas and sour cream or yogurt.
  5. Fold the dry ingredients into the wet until just combined. Gently fold in the nuts and chocolate chips if using.
Baking
  1. Pour the batter into your prepared loaf pan and smooth the top. Bake for 55 to 65 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  2. Let the loaf cool in the pan for 10 minutes, then lift it out and cool completely on a wire rack before slicing.

Notes

Quick to assemble and perfect for make-ahead breakfasts or a festive treat. The loaf gets better after a day.
