Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, add the sliced peaches and 1/2 cup of sugar. Toss until well coated, then set aside to let them macerate for about 10 minutes.
  3. In another bowl, combine the flour, baking powder, 1/4 cup remaining sugar, cinnamon, milk, and vanilla extract. Whisk until well blended and smooth.
  4. Pour the melted butter into the bottom of a 2-quart baking dish.
  5. Pour the batter over the melted butter without stirring. Then, add the peaches on top of the batter evenly.
Baking
  1. Place the baking dish in the preheated oven and bake for about 40 minutes or until the top is golden brown and bubbly.
  2. Let the cobbler cool slightly before serving.

Notes

Serve warm with whipped cream or vanilla ice cream. Store leftovers covered in the refrigerator for up to three days or freeze individual portions for up to a month.
