  • 1 unit lime For that refreshing zing.
  • 1 small red onion Finely diced, adding crunch and flavor.
  • 1/4 cup cilantro Fresh cilantro will brighten the salsa and enhance its taste.
  • to taste salt and pepper To season the salsa.
For the Salmon
  • 2 fillets salmon Fresh or frozen, just ensure they’re properly thawed if using frozen.
  • to drizzle olive oil For grilling the salmon and adding richness to the dish.

Method
 

Preparation of Mango Salsa
  1. Peel and dice the mango into small cubes. In a bowl, combine the diced mango with finely chopped red onion, chopped cilantro, and the juice of one lime. Season with salt and mix gently. Set aside.
Preparation of Salmon
  1. Pat the salmon fillets dry with a paper towel and season both sides with salt and pepper. Drizzle olive oil over the fish.
Grilling the Salmon
  1. Preheat your grill or grill pan over medium-high heat. Place the salmon fillets skin-side down and grill for about 4-5 minutes per side, or until cooked to your liking.
Serving
  1. Remove the salmon from the heat and serve warm, topping each fillet generously with the fresh mango salsa.

Notes

Feel free to substitute the mango with pineapple or avocado, or add diced jalapeños to the salsa for a bit of heat. You can serve this dish on a bed of greens or alongside quinoa.
