Ingredients

Main Ingredients
  • 1.5 lbs beef stew meat
  • 1 lb baby potatoes, halved
  • 1/2 cup unsalted butter
  • 4 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 cup beef broth

Method

Preparation
  1. In a slow cooker, combine the beef stew meat, halved baby potatoes, garlic, salt, pepper, thyme, and rosemary.
  2. Melt the butter and pour it over the mixture in the slow cooker.
  3. Pour in the beef broth.
  4. Stir everything to combine.
  5. Cover and cook on low for 6-8 hours or on high for 4-5 hours, until the beef is tender.
  6. Serve warm and enjoy!

Notes

Garnish with chopped fresh parsley or a sprinkle of flaky sea salt. Pair with a simple green salad or steamed vegetables to balance the richness. For best results, brown the beef briefly before cooking, and use uniform potato halves for even cooking. Can add carrots or pearl onions for extra vegetables.
