Preparation
- Boil a large pot of salted water and cook the pasta according to package instructions. Reserve 1/2 cup of pasta water, then drain the rest and set aside.
- In a large skillet, melt 2 tablespoons of butter over medium-high heat. Add the beef strips and season with salt and pepper. Sear until browned, about 5-6 minutes. Remove the beef from the skillet and set aside.
Cooking
- In the same skillet, add the remaining butter and minced garlic. Sauté until the garlic is fragrant and golden, about 2 minutes.
- Pour in the beef broth and stir, scraping the browned bits from the bottom of the skillet. Then add the heavy cream and let it simmer for 2-3 minutes.
- Return the cooked beef to the skillet, add the drained pasta, and toss everything together. If the sauce seems thick, you can add a little of the reserved pasta water until you reach your desired consistency.
Serving
- Sprinkle fresh parsley over the top and serve warm.
Notes
Feel free to swap spinach with kale or use whole wheat pasta for a healthier option. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
