  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1.5 lbs baby red potatoes, quartered
  • 1 lb whole carrots, peeled and cut into chunks
  • 6 cloves garlic, minced
  • 1/2 cup unsalted butter, melted
  • 1 tbsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp chopped parsley (optional, for garnish)
  • 1/2 cup chicken broth

Preparation
  1. Toss chicken, potatoes, and carrots into the slow cooker.
Mixing the Sauce
  1. In a bowl, combine melted butter, garlic, Italian seasoning, salt, pepper, and chicken broth.
Cooking
  1. Pour the garlic butter mixture over everything in the slow cooker. Stir gently to coat all pieces.
  2. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
Serving
  1. Garnish with fresh parsley if desired. Plate it up and enjoy this soul-warming meal!

Notes

Use thighs for juicier results; avoid lifting the lid during cooking to maintain temperature. For a thicker sauce, reduce cooking time or use a cornstarch slurry.
