Chicken and Potatoes
  • 1 lb chicken breasts Bone-in or thighs can be used, but may require longer cooking time.
  • 4 medium potatoes, diced Cut uniformly for even roasting.
  • 3 tablespoons olive oil For tossing potatoes.
  • 4 cloves garlic, minced Freshly minced for best flavor.
  • 1/2 cup grated Parmesan cheese Use freshly grated for best melting quality.
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste For seasoning.
  • Fresh parsley for garnish (optional) Add for freshness and color.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the diced potatoes, olive oil, minced garlic, Italian seasoning, salt, and pepper. Toss well to coat.
  3. Spread the potatoes in a single layer on a baking sheet.
  4. Season the chicken breasts with salt and pepper, then place them on the baking sheet with the potatoes.
  5. Sprinkle the grated Parmesan cheese over the chicken and potatoes.
Baking
  1. Bake for 25-30 minutes or until the chicken is cooked through and the potatoes are golden brown, stirring halfway through.
  2. Garnish with fresh parsley if desired, and serve hot.

Notes

Cool leftovers to room temperature, then store in an airtight container in the refrigerator for up to 3–4 days. Reheat in a 350°F (175°C) oven for 10–15 minutes to restore crispness.
