  • 2 pieces boneless, skinless chicken breasts
  • 2 cups pasta (fettuccine or penne)
  • 4 cloves garlic, minced (fresh is best)
  • 1 cup heavy cream Can substitute with light cream or Greek yogurt for a healthier option.
  • 1 cup grated Parmesan cheese Use fresh grated for the best flavor.
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Method
 

Preparation
  1. In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Season the chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook for about 6-7 minutes on each side, or until fully cooked and golden brown. Remove the chicken from the skillet and let it rest.
  3. In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for about 1 minute until fragrant, taking care not to burn it.
  4. Pour in the heavy cream and stir it with the garlic, letting it simmer for a couple of minutes. Gradually add the Parmesan cheese, whisking until smooth and creamy.
  5. Slice the rested chicken and add it back to the skillet along with the cooked pasta. Toss everything together until well coated in the sauce.
  6. Plate the Garlic Parmesan Chicken Pasta and sprinkle with fresh parsley for a pop of color. Enjoy!

Notes

Store leftovers in an airtight container in the fridge for up to three days, or freeze for up to two months. When reheating, add a splash of milk or cream if the sauce has thickened.
