Preparation
- In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
- Season the chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook for about 6-7 minutes on each side, or until fully cooked and golden brown. Remove the chicken from the skillet and let it rest.
- In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for about 1 minute until fragrant, taking care not to burn it.
- Pour in the heavy cream and stir it with the garlic, letting it simmer for a couple of minutes. Gradually add the Parmesan cheese, whisking until smooth and creamy.
- Slice the rested chicken and add it back to the skillet along with the cooked pasta. Toss everything together until well coated in the sauce.
- Plate the Garlic Parmesan Chicken Pasta and sprinkle with fresh parsley for a pop of color. Enjoy!
Notes
Store leftovers in an airtight container in the fridge for up to three days, or freeze for up to two months. When reheating, add a splash of milk or cream if the sauce has thickened.
