  • 12 oz Pasta of your choice (spaghetti works beautifully) Can substitute with gluten-free options.
  • 1 bunch Garlic scapes Offers a milder garlic flavor.
  • 2 tbsp Olive oil For sautéing.
  • 2 tbsp Lemon juice To brighten the flavors.
  • 1 cup Nutritional yeast For a cheesy, umami touch.
  • to taste Salt Adjust as needed.
  • to taste Pepper Adjust as needed.
For Garnish
  • 1 cup Fresh herbs (like parsley or basil) For garnish.

Preparation
  1. Cook the Pasta: Start by boiling a pot of salted water and cook the pasta according to package directions until al dente. Reserve about a cup of pasta water before draining.
  2. Sauté Garlic Scapes: In a large skillet, heat olive oil over medium heat. Add chopped garlic scapes and sauté for about 3-4 minutes until they become tender and fragrant.
  3. Combine Ingredients: Add the drained pasta to the skillet along with lemon juice, nutritional yeast, and salt and pepper. Toss everything together, adding reserved pasta water as needed to create a creamy sauce.
  4. Garnish and Serve: Serve the pasta hot, garnished with fresh herbs for a pop of color and flavor.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. To reheat, add a splash of water or vegetable broth in a skillet over medium heat, stirring until warmed through.
