  • 1/2 cup olive oil Add more for a thinner consistency.
  • 1 each lemon, juiced Adds brightness to the pesto.

Preparation
  1. Add the chopped garlic scapes and pine nuts to a food processor. Pulse until finely chopped, and the mixture attains a paste-like consistency.
  2. Next, add in the grated Parmesan cheese, lemon juice, salt, and pepper. Blend until well combined.
  3. While the processor is running, slowly drizzle in the olive oil until the pesto reaches your desired consistency.
  4. Taste and adjust seasoning if necessary, adding more salt, pepper, or lemon juice according to your liking.
  5. Transfer your vibrant Garlic Scape Pesto to a jar or an airtight container.

Notes

The pesto can be served over pasta, grilled chicken or fish, or as a dip for vegetables. It can be refrigerated or frozen for later use. Drizzle with olive oil to prevent browning when storing.
